Curried Squash Soup

Ingredients
4 Cups
vegetable stock
2 teaspoons
Curry Powder
2 teaspoons
Garlic Powder
2 teaspoons
Onion Powder
1 teaspoon
Salt
Step by Step Instructions
- Choose your favorite winter squash (I like Hubbard) cook, cool, peel and puree in your food processor or with a hand blender. You'll need about 4 cups of pureed squash. Place in a large saucepan.
- To the squash, begin adding the vegetable stock one cup at a time, stirring and adding more stock until you reach the desired consistency. Add the curry, garlic, onion powder and salt. Heat over medium low heat until hot and bubbly.
- Ladle into serving bowls and enjoy. Serving Suggestions: Top each bowl with a dollop of sour cream, crumbled bacon bits, or swiss cheese.
