What to do with Sweet Potatoes

Sweet potatoes are not potatoes but are a member of the morning glory family. A dense source of nutrition that is largely overlooked in the United States. We eat less than five pounds per person a year. Unlike white potatoes, sweet potatoes are loaded with complex carbs- the same variety you find in whole grains- and they lower the risk of heart disease and diabetes according to Harvard Medical School. They also contain large amounts of Vitamin A and Manganese, which is necessary for brain function. The smaller the sweet potato the sweeter it is and they can be substituted for white potatoes in any recipe.

Sweet Potatoes with Apples and Cranberries
Combine in a pan with a lid and put in oven:
2 large sweet potatoes peeled and cubed
1 large tart apple like granny smith diced
2 T dried cranberries
2 T butter
1 T brown sugar
1/2 t salt
1 t. cinnamon
Cook on medium heat stirring occasionally. Sweet potatoes should be al dente.

Sweet Potato Slaw
Combine
3 C. shredded sweet potatoes (raw)
2 C. shredded tart apples
1 C. pineapple chopped
1/2 C pecans chopped
1/4 C. raisins
Sauce:
Blend together , then add:
2T honey
2T lemon juice
1/2 c. almonds
Pineapple juice as needed to make sauce pourable
Refrigerate at least 1 hour before serving.
